Overview

This program and the included RTI courseware are designed to prepare learners for successful completion of the Certified Fundamentals Cook (CFC) certification through the American Culinary Federation (ACF), while building the technical culinary skills needed for professional foodservice environments. By merging fundamental kitchen logic with professional industrial tracking, this course prepares you to transition into high-volume commercial brigades, corporate dining systems, and resort operations.

You will master precision knife skills, safety protocols, wet- and dry-heat physics, structural sauce compounding, and bakeshop science. Beyond technical skills, this culinary arts course incorporates official industry core modules that meet the academic requirements of the American Culinary Federation Education Foundation (ACFEF) and WorldChefs. To verify competency, this culinary arts training combines interactive assignments with instructor-led digital video and photographic culinary portfolio projects, all reviewed by a dedicated team of professional chef instructors.

This culinary training functions as the theory component that complements formal ACF registered apprenticeship programs. Covering topics such as professional ethics, menu design, kitchen systems, and allergen-aware food preparation, the course awards Continuing Education Hours (CEHs) that may be applied toward eligible ACF-sanctioned apprenticeship requirements completed through an employer.
